Wine Class - December 13th

December: Dessert Pairings

Pear Symphony (This is my award winning dessert: Almond and Poppy seed sponge cake encasing white chocolate mousse, a pear, cinnamon and clove jelly insert. Dark Chocolate Glacage topping with a sugar tuile (pronounced twill), creme anglaise and a raspberry coulis on the plate.

Pumpkin Ale Cheesecake with a beer and nut caramel sauce
Southern Engineering (Peanut butter and fudge brownie with caramel mousse, a vanilla brulee insert, dark chocolate glacage on top and black tea macarons decorating the outside.)
Wrapped and stuffed baked pears

Ricotta bavarian mousse with flavors of orange and lime. Plated with fresh fruit and a sugar tuile

Butternut bread pudding with a bourbon caramel sauce

Key Lime pie

Petit Fours:
chocolate pistachio fudge bites, apple macarons, berry and caramel cream bites and strawberry-margarita cheesecake bites.


Wine Dinners in 2012

September: Unusual red wines. Merlot, Cabernet Sauvignon and Pinot Noir are great wines but they’ll try some less common reds. They will range from sweeter wines like Brachetto d’aqui to big dry wines like Petite Sirah.

October: Wild game and wine pairings. Dove and quail and other game paired with wine.

Pricing will change for October $65 per person/$110 per couple

November: Thanksgiving pairings. Few meals carry as much pressure as Thanksgiving with the family. Whose recipes should you use? What subjects are off limits? What wine should you serve? Anderson said, “I can’t do anything about the first two, but I can definitely help with the pairing. We’ll try different wines with samples of traditional Thanksgiving food and come up with some perfect options.”

December: Dessert wines. “What would be the point of having a Cordon Bleu-trained pastry chef is we didn’t feature her amazing desserts with dessert wines?”
