Here is the current vintage of Cap*Rock wines. These are arranged in the order in which we would sample them to you if visit us in our tasting room.

Palo Duro Canyon White

Tasting NotesThis refreshing blend of Chardonnay and Pinot Grigio grapes produces subtle hints of green apple, lemongrass and citrus.

Pairings: This is perfect with fried fish or breaded chicken or pork. One customer says that this is the perfect hot tub wine and we won’t argue!

Release Date: November 2007

2008 Viognier

Tasting Notes: This wine has a floral nose with strong honeysuckle accents. It has a slightly sweet taste on the pallet, but finishes dry. 

Pairings: It makes a nice pair with spicy food, but also is perfect for sipping by the pool.

Notes: This is the first wine produced in Texas labeled as “Made from organic grapes”

This is a single vineyard wine from Bingham Family Vineyards.

Release Date: June 2009

2005 Chardonnay

Tasting Notes: This is a refreshing burst of green apple and lemon cream.

Pairings: Try this wine with slightly spicy chicken or fish dishes, or just sip it while snacking on fruit and cheese.

Blush Royale

Tasting NotesOur Blush Royale is a gorgeous full-bodied ruby tone bursting with cherry, strawberry and hints of honeyed sweetness.

Pairings:  This will pair with a wide variety of food, from classic American hamburgers off the grill during the summer, to spicy Thai food.  The slight sweetness really pairs well with spicy food.

Palo Duro Canyon Red

Varietal: 85% Merlot 15% Cabernet

Tasting NotesThis classic Bordeaux style wine shows raspberry, chocolate and a bit of cherry upon first opening. After the wine has had time to open, you may taste some licorice.

Pairings:  This is a versatile dry red that should pair with wild game. It has the backbone to stand up to complex sauces and glazes, so feel free to experiment.

2005 Merlot

Tasting NotesA beautiful dark red, our merlot boasts plum, spice and cherry flavors balanced with a silky finish.

Pairings:  An easy wine to pair with food. This will go well with lasagna, a steak, or even a pork roast.

2005 Cabernet Sauvignon

Tasting NotesThis Cabernet shows hints of mint and dark chocolate.  After it has had time to open up a bit, you will notice more spice, and perhaps some white pepper.

Pairings:  The sweet tannins in this wine cry out for a nice steak. It will also pair well with just about any hearty beef dish.

2005 Reserve Cabernet Sauvignon

Tasting NotesThe aroma promises vanilla and chocolate and this wine delivers.  You may taste chocolate covered cherry.  There is also plenty of sweet toasty vanilla.

Pairings:  This wine’s smooth and sweet tannins make it an excellent companion to steak or roast beef. It is also the perfect wine to sip while sitting by the fire.
